Apple, pear and walnut salad

Ingredients:

  • 2 tablespoons red wine vinegar
  • 2 1/2 tablespoons orange juice
  • 1 orange, zested
  • 1/2 cup raisins
  • 4 apples, preferably use 2 to 3 different kinds
  • 2 pears, preferably red and green
  • 2/3 cup walnuts, toasted and coarsely chopped
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper

Method:

In a large bowl whisk together vinegar, orange juice, zest and raisins. Core and cube apples and pears. Add fruit and walnuts to a bowl and drizzle with oil. Toss well to combine. Season, to taste, with salt and pepper. Refrigerate one hour before serving.

Providing a first class production facility for our staff, complete with acute safety practices and procedures, is fundamental to the core values of Kennedy’s.

With the appointment of new Safety Representative, Kerry Lucas, Kennedy’s continues to honour this pledge.

Kerry’s role involves risk assessment, prevention planning and the demonstration of positive, safe work practices within his area of production.

In addition to this appointment, two staff recently upgraded their first aid skills attending a senior level Timber and Building Materials Association (TABMA) course.

Presented at Timber House, Ben Lucy (Leading Hand) and Grant Cropp (Kiln Manager) participated in the accredited training and assessment.

Ensuring our staff perform their roles within the safest possible environment is a promise Kennedy’s endeavours to deliver each and every day.

An equally durable product to traditional timber flooring, its unique surface height provides a smooth transition to adjoining floors, including carpet and tiles.

Easy to install, Eco-Lay Flooring is pre-straightened and can either be fully glued to the subfloor and/or secret nailed, ensuring a clean finish.

Kennedy’s officially endorsed by NCOP

We are delighted to announce that Kennedy’s Classic Aged Timbers have recently been endorsed as compliant with the Federal Government National Code of Practice. Kennedy’s Classic Aged Timbers have recently been endorsed as compliant with the Federal Government National Code of Practice.

This stamp of approval ensures companies using timber, on any Federally Government funded project, can now add Kennedy’s as an approved supplier to such projects.

The National Code of Practice for the Construction Industry establishes minimum standards businesses must meet to be eligible to undertake certain building and construction projects funded by the Australian Government.

The Code, in conjunction with the 2009 Guidelines, sets out best practice principles that reflect national workplace relations laws.

These practices endeavour to ensure quality and accountability throughout the industry, maintaining a consistently high standard across the board.

The practices can be summarised by six main principles.

Applying to specific Australian Government construction projects, the National Code is endorsed by the Australian, state and territory governments.

“Kennedy’s have enjoyed a long and successful history of working with various levels of government in the development of such projects. To be recognised, and approved, nationally for our product and practice is an honour we value as a team,” says Michael Kennedy, Director.

Brisbane’s acclaimed Portside Wharf

Situated along the Brisbane River, Portside Wharf plays host to Queensland’s premier cruise ship terminal.

Located within the exclusive suburb of Hamilton, this extensive dockside spans four hectares of prime riverside property. 

Developer Brookfield Multiplex approached Kennedy’s during the construction phase to assist with regrading the timber that had been removed from the former wharf.

Recognising the enormous potential of the original timber, Kennedy’s suggested reusing it throughout the new design, in a variety of applications.

Inspired by the recommendations, this remarkable recycled Ironbark is now present throughout the entire complex.

From exterior timber screens, flooring and stair treads, to seating, decorative beams and landscaping, the reused timber is also featured artistically (as pictured on the front cover of this edition).

A luxurious residential, commercial and retail facility, this $135million project demonstrates the ultimate use of recycled timber.

By reusing the timber within its own space, the design incorporates a significant display of sustainable building whilst limiting its impact upon the environment.

Kennedy’s timbers stand the test of time

Suncorp Stadium Brisbane

When legendary Lang Park was reborn as Suncorp Stadium in 2003, Kennedy’s Classic Aged Timbers took centre stage in the contemporary blueprint.

Salvaged from the Howard Smith Naval Complex, over 45,000 lineal metres of Kennedy’s recycled Spotted Gum and Grey Ironbark was applied to the stadium’s extensive exterior. 

Integral to the innovative design, this century old timber showcases an exceptional display of quality recycled building products.

Functional in purpose, the timber slats link together to create four massive screens suspended from the building’s facades.

Each batten was moulded with 3mm pencil round edges and the timber sawn, yet left uncoated, to achieve a natural, weathered grey appearance.

Providing a welcoming space, the timber screens also assist in reducing sunlight and glare from the immense glass curtain walls enclosing the upper level of the stadium.

Seven years on and Kennedy’s recycled timbers have settled into their new home with ease, style and splendour.

The richness of the 100 year old timber embraces a shared history of its own origin, united with the celebrated sporting site.

Today Suncorp Stadium is recognised as the most modern dedicated rugby stadium in Australia.

Kennedy’s, honoured to have contributed, congratulates the masters of the project; the architects, designers and government representatives for their commitment to green building materials, demonstrating the very best Queensland has to offer.

Cockle Bay Wharf Sydney

In 1998 Kennedy’s proudly took part in one of the largest commercial projects within Australia, incorporating recycled timber.

Cockle Bay Wharf, a part of Darling Park, is a 3.5ha site located along the shores of magnificent Darling Harbour.

Recommended by Mike Brown and the architctural team at Civil and Civic (now Bovis Lend Lease), Kennedy’s supplied masses of recycled, class one durability timber for the cutting edge project.

Demonstrating immense versatility, Kennedy’s timbers were applied to broad sections of the development including decking, cladding, flooring, stairs, doors, windows, shade structures, feature posts, beams and detailed joinery timber items.

Culminating in an inspiring display of architectural design, Cockle Bay Wharf remains one of the most notable commercial, retail and civic sites within Australia today.

With five cafes, four restaurants, three bars, two function centres and a nightclub, accompanied by an array of retail options, waterfront views, community art and relaxing gardens, Cockle Bay Wharf is a popular destination for Sydney locals and visitors.

And 12 years on, the timber has lived up to its promise; in character, colour and resilience.

Strolling along the idyllic decks of the wharf, it’s hard not to be impressed by the widespread use of the recycled timber, blending perfectly with its surrounding environment, whilst paying homage to it.

The Normanby Hotel

Timber has always played a key role in the history of this Brisbane icon.

Located two kilometres from the CBD, the current Normanby establishment was built upon the site of a former timber and shingle hotel first erected in 1872.

Celebrating its past with ongoing refurbishments inclusive of timber, Kennedy’s were approached to assist with the hotel’s latest upgrade.

The new Bovine Restaurant, specialising in local produce, showcases an elegant display of Kennedy’s precision profiled, class one durability Spotted Gum and Grey Ironbark.

Lining the interior of the hotel’s latest jewel, this chic space boasts an ideal mix of contemporary and classic design.

Reflective of its name, Bovine, the surrounding leather seats and rawhide wallpaper further complement the stunning timber cladding.

Catering for 120 guests, the new restaurant provides patrons with a range of dining experiences, including a sophisticated wine and cocktail bar.

The Bovine, located inside The Normanby Hotel, is now open to the public.

The Norman Hotel

Following a destructive fire that tore through the historic Norman Hotel in 2009, the subsequent restoration effort required quality timber within a critical time frame.

Recut from redundant power poles, the recycled Spotted Gum has enhanced the treasured character of the refurbished restaurant.

Kennedy’s impressive turnaround, from order to delivery, ensured the restoration effort was completed on time. Within a month of the fire, the hotel had reopened its doors.

A recent upgrade of the Regatta Walk Foreshore Reserve in Toronto, New South Wales, exhibits a superb collection of Kennedy’s recycled timber.

An innovation of GMW Urban, the $1.44million redevelopment includes a new kiosk, outdoor dining area, pavilion and amenities block.

With a design dedicated to incorporating environmental protection works, GMW Urban were keen to integrate sustainable building materials.

Responding to the demands of this green plan, Kennedy’s supplied precision profiled Spotted Gum and Grey Ironbark.

The sprawling lakeside deck is also laden with Kennedy’s recycled Tallowwood.

Merging with the natural environment, Kennedy’s recycled timber is evident throughout the completed project.

From exterior wall cladding, decking and lining to feature posts and beams, Kennedy’s timbers have assisted in the vibrant transformation of this popular public space.

Enriching the end product, this upgraded facility displays the ideal use of recycled timber in a recreational setting. 

Surrounded by local attractions, including the Toronto baths, the foreshore redevelopment has been warmly welcomed by village locals.  

The new Regatta Walk Foreshore Reserve, located adjacent to the Toronto CBD on Victory Parade, was officially opened in March 2010.
